Thyme honey is harvested in the arid areas of eastern Sicily (mainly in the Iblei mountains) at the beginning of the summer. Thyme honey has a particularly strong and peculiar aroma, very persistent, pleasantly pungent. For this reason it is very appreciated by loyal admirers, willing to look specifically for this variety.
Thyme honey is characterized by a marked aroma of thymol immediately perceptible on the palate, with an aftertaste of dried aromatic herbs. The color is dark enough for honey in its liquid state and tends to clear in solidified honey. Due to its characteristics it is recommended in combination with strong and marked flavor cheeses such as seasoned and spicy ones.
The Brezzo family has been a beekeeper for 3 generations (1950) on the lands of Roero in Piedmont.
