The region of Calabria represents 80% of the national production. The plant, native to the Mediterranean, grows spontaneously on the Calabrian coast, where the nature of the soil help and the climate determine the glycyrrhizin content. The most popular variety is Glabra. Its roots, whose juice is extracted, are long and penetrating, infesting and fertilizing like all legumes.
Its paste is thick, black, shiny and fragrant. Its taste is bitter-sweet, and its scent very intense.
Licorice is used in confectionery, syrups, teas and liquorice liquor.
Licorice has been known for centuries for its exceptional properties: good for the respiratory system, it is an active ingredient that reduces cough stimuli and promotes expectoration. The chewed roots promote digestive activity and, in some cases, help to stop smoking.
