Traditional deer ragout
The great passion people in Tuscany feel for game meat reveals itself in the numerous recipes based also on large size animals.
The Red deer, unquestionably the king of big size game, still maintains that aura of nobility that in the past has made the protagonist of royal banquets, positioned on tables with the magnificence of its horns and even its fur.
In the tradition of our cuisine, in which the main course has always had a special importance, in addiction to roasted meats and stew, ragout is very popular, which is prepared cooking the meat, tomatoes and herbs for hours with great passion. Following this tradition, the Ragù di Cervo Toscana in Tavola ® is wisely prepared by their cooks with the addiction of bay and plain chocolate, which enhance the taste of this meat.
We suggest to savour this ragout with pappardelle or long strand pastas, which marry weel with red textured wines.
