The Eggplant is one of the most widely used ingredients and tasty Apulian cuisine, both to prepare pasta as a side dish or that delicious preserves. The preparation of preserves recipe is typical of the ancient Apulian tradition: is prepared from Eggplant harvested at the right degree of ripeness, high consistency, sweet taste and with small quantities of seeds. Eggplants are peeled by hand, put to soak in water with vinegar and salt, and then planted in pots with fresh herbs (Mint and chilli) and olive oil.
