Tagliatelline belong to the long nesta shape dried pasta family, they have a flat section, they are 0,91 mm thick and they originate from Liguria.To trace the origins of Tagliatelline we must go back in time and out of the national boundaries: Tagliatelline were already known in 700 d.C. in Japan, imported from China along with other important religion and cultural aspects. In Japan they were called Udon, soft wheat tagliatelline, and they were very popular, especially in the province of Osaka and in the Southern part of the Country.Tagliatelline have the right dimension to be excellent with both dried pasta dishes and in broth soups. In the first cases the right sauces are the Ligurian ones, pesto in the first place, but also with fish and shellfish sauces. Tagliatelline are also very good in vegetable or meat soups, or with an eye on Oriental tradition, in broths with seaweed and mushrooms.
