Linguine is the long pasta format typical of Liguria: it has the shape of flat and narrow tagliatelle. They accompany the traditional pesto.
The crushed format and the slightly rounded shape allow them to capture the seasonings and to restore the variety of flavors.
Durum wheat semolina, water.
Net weight : 500gr
They are excellent with butter and sage or fresh tomato sauces enriched with vegetables and herbs or spicy sauces prepared at the last minute with extra virgin oil, garlic, pepper, anchovies and capers.
This type of dough goes perfectly with fish and shellfish sauces and "white" sauces prepared with cream of milk, mascarpone, soft and melting cheeses and a touch of spices such as saffron, horseradish and ginger.
