Long format, similar to the spaghetti but with a larger diameter, originating from the Neapolitan and ancient origins: a document attests its sale already in 1284. The first indications on the preparation of the vermicelli go back to the Libro de arte coquinaria (1464) by Maestro Martino Five hundred pasta makers in Naples were called "vermicellari". They are usually prepared with the traditional pummarola, with vegetable sauces (courgettes, aubergines and peppers), fish sauces and molluscs or fast sauces (oil, garlic and chilli).
